Easy Grilled Salmon Recipe
I have two young kids, so anything with the word “simple” in it is a favorite of mine right now. Unfortunately, I find that the word “simple” in a recipe usually means it lacks flavor. Not at my house! Even though the hours between 4:00 and 7:00 pm are crazy, I’m still not willing to sacrifice a delicious dinner.
So, is there a recipe that’s both easy and delicious? Sign me up! This Grilled Jalapeño Salmon with Avocado Salsa definitely fits the bill. It also comes together quickly. Simply marinate and bake the salmon, then chop the salsa while the salmon bakes. Rice or other grains are optional (I like to use it to complete the meal) but you make yours!

Required raw materials
- salmon – I love fresh wild caught salmon if you can find it.
- olive oil – You can also use avocado oil for salmon and salsa.
- apple cider vinegar – This helps perfect the acidity.
- Jalapeños in Adobo – These can be found in most grocery stores in the Latin American section.
- Tamari – I use soy sauce to keep the recipe gluten-free. If you don’t have soy sauce, you can also use soy sauce.
- Honey – for sweetness. Maple syrup also works.
- avocado – It’s best to use large, ripe avocados.
- cucumber – I used English cucumbers, but any cucumber will work here.
- coriander – or other fresh herbs, if desired.
- jalapeno pepper – If you like spice, feel free to leave some seeds in or remove them completely
- Lyme – Juice. If limes are not available, lemons can also be used.
- feta cheese – or other crumbled cheese, but feta is best because it’s tangy and pairs well with avocado salsa.
- salt+pepper – Add more or less according to taste and sodium preference.
- rice – or any other grain.
How to Make Chipotle Grilled Salmon
Step 1: Marinate Salmon
Place salmon in skillet or large roasting pan and pat dry with paper towels. In a small bowl, combine olive oil, apple cider vinegar, adobo peppers, soy sauce, and honey. Pour marinade over salmon and spread evenly with a spoon. Sprinkle with salt and pepper.


Step Two: Grill the Salmon
Bake in the oven for 15-20 minutes or until salmon is cooked to your liking. Check your salmon after 15 minutes as baking time depends on the thickness of the salmon.


How to Make Avocado Salsa
Step Three: Make the Avocado Salsa
While salmon is baking, combine avocado, cucumber, cilantro, and jalapeño in a large bowl. Top with olive oil and lime juice. Stir in crumbled feta, salt and pepper, and season to taste.


Step 4: Serve
To serve salmon, cut into 4 pieces, place over rice (or other grains) and sprinkle with avocado salsa.

How long should I grill salmon? Good question! It depends on the thickness of the salmon, but generally speaking, the salmon is done if baked in a 400 degree oven for 15-20 minutes. Check it after 15 minutes and you can always put it back in the oven if you want it to cook a little more.
I would definitely say it’s spicier. Jalapeños in adobo tend to be delicious! For the guacamole salsa, you can omit the jalapeños if you don’t need the extra spice.
Unfortunately, that’s just the name of the game with avocados. As the avocado sits, it oxidizes and turns brown. Lime juice should help a little, but it will turn brown over time. But it still tasted delicious within 3 days.

Storage instructions
Store simply baked salmon leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in microwave, oven or air fryer. To be honest, it won’t taste as delicious if reheated, but it still works in a pinch! Avocado salsa will also keep for up to 3 days, but the avocado will turn brown due to oxidation.
