Soften bread. This is essential to make sure you can roll up the windmill sandwich. I do it for 30-40 seconds in the microwave.
Use adhesive. Cream cheese is my go-to “binder”, but you can get creative here. Vegan or dairy-free cream cheese spreads, but so are hummus and even Tzatziki. More ideas are listed below.

Ingredients in a windmill sandwich
- according to – I like to use flour tortillas as a sandwich base, but you can also use Lavash, Flatbread, and even big chunks of lettuce.
- spread – That’s what makes your scroll together. I like to use cream cheese, but other ideas include hummus, tzatziki, baba ganoush, and even pesto.
- Meat – My preference is smoked turkey, but you can use thinly sliced deli meat, thinly sliced chicken, cooked bacon and even smoked salmon.
- cheese – Any sliced cheese works here, but I can’t deny the Turkish + Cheddar combo!
- vegetable – Usually leafy greens, but you can also use sliced peppers, cucumbers, or chopped carrots.
How to make a windmill sandwich
Step 1: Evenly propagate
Soften the tortillas in the microwave for 30-40 seconds. Paint the softened cream cheese into a uniform layer and place it on all 4 tortillas. Sprinkle ranch seasoning (or bagel seasoning) over the tortillas.


Step 2: Add meat, cheese + vegetables
Follow the bottom layer of the tortilla layer on two slices of turkey, 2 slices of cheese and a small amount of spinach.


Step 3: Volume + Slice
Roll the tortilla from below into logs and cut it into 1-inch windmill




Simple swaps and replacements
Exchange meat – Add other deli meats, such as chicken, salami or ham, which will replace smoked turkey. Smoked salmon is also a creative alternative!
Change vegetables – I like to use spinach, but any green leafy green can work in these.
Use other cheeses – Any sliced cheese can work here.
Switch the sauce – You can use hummus instead of cream cheese if you want. Tzatziki will also be as good as pesto or any other cream sauce.
Add kimchi – I love the acidity of the kimchi added to my turkey windmill sandwich. I recommend using thinly sliced bread and buttered pickles.
Add bacon – To give the windmill sandwich more, you can always add cooked and chopped bacon.
