Back to school is here! I know you all know that feeling. Even though it’s been five years since I went back to school (how did it take so long?!) it’s early September and I’m still excited and nervous.
I may or may not have a back-to-school shopping spree for myself. What to wear on the first day? Haha, we all know I wear Lulus every day.

I took on the task of making a simple, healthy, kid-friendly lunch because lunch is by far my hardest meal to eat. Even though I usually eat lunch at home, I rarely take the time to put something together and then sit down to eat it. This Buffalo Chicken Salad is the easiest recipe ever and it tastes amazing! One day I served it on Udy’s Gluten Free Ancient Grain Bread, and another day I served it on a celery stick to go with my veggies and some ancient grain chips. It was perfect and actually allowed us to sit down and have a decent lunch. Haza!

How to Make Buffalo Chicken Salad
Let’s talk about this sandwich, or the Buffalo Chicken Salad, if you will! We’ve discussed before how I’m a diva when it comes to lunch. I’ll spend hours eating breakfast or dinner, but lunch has to be the most convenient meal, otherwise it’s just popcorn, avocado, and eggs (I wish I were kidding).
If you already have some leftover chicken on hand, this recipe takes less than 5 minutes to make. It can also be customized to suit your spice level.
In a rare incident, I went short on spice (you’re welcome), but if you like spicy like I do, feel free to go heavy. It turns out that Frank’s Red Hot is Paleo and actually quite pedigree in terms of its ingredients. But that didn’t stop me from using it.
I think the greatest debate in life is Franks vs. Sriracha vs. Cholula. Almost as challenging as choosing your favorite recipe in this post. Good luck…
Buffalo Chicken Salad

- 2 cups shredded grilled chicken
- 2 celery stalks, chopped
- 2 green onions (white and light green only), chopped
- 2 tablespoons Hot sauce (I like Franks Red Hot or Cholula)
- 1 tablespoon butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili
- 1/2 lemon, juiced
- salt and pepper, taste
Serve:
- bread
- celery, Cut into thirds
- Bibb lettuce for lettuce wraps
- Place chicken, celery and green onions in a large bowl.
- Mix all other ingredients in a separate bowl.
- Add the wet ingredients to the chicken and stir well.
- Top with bread or celery, if desired.
- Can be stored in an airtight container in the refrigerator for several days.
