What makes this recipe so great?
Besides these healthy peanut butter cookies tasting absolutely delicious, here’s why you’ll want to make this recipe:
- No flour + no refined sugar – Please get the flour! No flour is required to make these cookies. Likewise, we use coconut sugar instead of traditional refined sugar.
- 3-ingredients – That’s right, you only need 3 ingredients to have healthy cookies on the table
- perfect texture – There’s nothing better than a chewy peanut butter cookie recipe. These fit the bill perfectly!
Required raw materials
- natural peanut butter – You’ll want to use a natural, smooth peanut butter. Ideally, it should be thick and the oil should be well blended.
- coconut candy – You can also use brown sugar, but using coconut sugar keeps these cookies free of refined sugar.
- Egg – This helps tie your cookies together, so I wouldn’t recommend substituting with a vegan alternative.
How to Make Healthy Peanut Butter Cookies
Step 1: Make the Cookie Dough
Combine all ingredients in a large bowl.
Step 2: Prep Pan + Bake
Roll the dough into 12 small balls and flatten lightly with your palms. Score the cookies in opposite directions with a fork while flattening slightly. Bake for 12 minutes. Remove cookies from oven and Place on baking sheet for at least 10 minutes ——This step is very important! Do not attempt to remove from the pan before doing so. After 10 minutes you can remove from the pan and place on a wire rack to cool to room temperature.
Mix easily
Looking for some simple remixes? Here are some ideas:
chocolate chips – Stir in 1/3 cup chocolate chips
crushed peanuts – Stir in 1/3 cup crushed peanuts for a little texture.
cocoa powder – Add 2 tablespoons of cocoa powder to the dough to make chocolate chip cookies.
flaky sea salt – If you like a salty-sweet flavor, sprinkle your cookies with flaky salt before baking.
