How long can fresh mung beans be kept?
Fresh green beans usually keep in the refrigerator for up to 1 week. To maintain freshness, I recommend placing them in a perforated bag or wrapped in a damp paper towel to keep them moist but not too soggy. But if you like to prepare or preserve food, I definitely recommend freezing your green beans.
Can you freeze fresh green beans?
Yes! Fresh green beans can be easily frozen to maintain freshness. Ideally, you start with the best quality green beans you can find and freeze them during peak green bean season (which is from May to October depending on where you live). The earlier you freeze the better, as this will help preserve texture and flavor.
Do I need to bleach them?
There is no need to blanch green beans before freezing them. Unlike zucchini, which tends to store and cook better after blanching and freezing, green beans actually taste better if they are not boiled before freezing. At least that’s my personal texture preference, but every vegetable is different.
How to Freeze Green Beans
step 1) Rinse the green beans in a large bowl or colander and drain off any excess liquid. Pat green beans dry with paper towels.
Step 2) Trim the ends of the green beans. Cut into desired length (I like 1-inch slices).
Step 3) Place in a single layer on a baking sheet lined with baking paper. Freeze for 3-4 hours.
Step 4) Place the green beans in an airtight or ziplock bag and remove as much air as possible to avoid frostbite.
How long do frozen green beans last?
Frozen green beans will keep in the refrigerator for up to 6 months as long as they are stored in an airtight freezer bag. Be sure to label the bags so you know when to freeze them.
