One of my sleeper pick recipes are these tortilla pizzas! This is such an easy recipe that I almost considered not posting it. But in true form, you all end up loving it when I doubt myself. I think their simplicity is why they are so popular.
These mini tortilla pizza cups fit that rule too! They’re basically a mini version of my tortilla pizza recipe, but baked in a muffin tin. I mean, everything’s better when it’s micro, right?

Ingredients in Mini Tortilla Pizza Cups
- olive oil spray – or any other cooking spray to grease the muffin pan.
- 10-inch corn tortilla – Feel free to use flour, corn or grain-free. Each tortilla makes 4 rounds.
- ketchup – or any other pizza sauce. My homemade tomato sauce is probably my favorite option!
- mozzarella cheese – or any other cheese desired that will melt quickly.

You’ll also need a muffin tin and some round cookie cutters (2-3 inches).
How to Make Mini Tortilla Pizza Cups
Step 1: Cut out circles
Use a round cookie cutter to cut 12 small circles from the tortilla. Each tortilla makes 4 rounds. Place a small tortilla in each waffle slot and push it into the slot.
Step 2: Prepare Tortilla Pizza Cups
Divide marinara sauce evenly into each cup (about 1 tablespoon per cup). Add desired ingredients. Top with chopped mozzarella cheese.
Step 3: Bake
Bake in oven for 8-10 minutes or until cheese is melted and cups are golden brown. Use a knife or spatula to remove from the mini tortilla cups and serve.
Ingredients suggestions
vegetarian – Add a few tablespoons of fresh tomatoes, red onions and red or green chillies. Olives are also great if that’s your thing. For a sneaky veggie, try cooked spinach or broccoli, chopped.
Meat lovers – Add about 1/4 cup of meat such as pepperoni, cooked sausage, or ground beef.
pesto – Substitute store-bought or homemade pesto for pizza sauce. Top with desired cheese. Can you recommend this sun-dried tomato pesto?
mexican – Use enchilada sauce instead of pizza sauce. Top with Mexican cheese blend and desired ingredients.
BBQ style – Use barbecue sauce instead of pizza sauce.
buffalo style – Use buffalo sauce instead of pizza sauce and top with crumbled blue cheese.
FAQ
Use a small cup or mason jar and a knife to draw a circle around the cup. This will allow you to get perfectly round tortilla rings without a cookie cutter!

freeze: Freeze leftovers on a sheet pan for 3-4 hours. Place frozen pizza cups in a ziplock bag and freeze for up to 3 months. Allow to thaw in the refrigerator overnight or bake in the oven for 10 minutes to defrost.
