Oatmeal Apple Muffins Ingredients
- oat flour – You can use store-bought oats or grind your own in a high-speed blender (use old-fashioned or quick-cooking oats, not steel-cut oats).
- oatmeal -Same as above- use regular old fashioned or quick cooking oats, not steel cut oats!
- coconut palm sugar – or brown sugar or other granulated sugar
- baking soda + baking powder – Helps waffles rise.
- Cinnamon – The perfect spice pairing for these apple muffins.
- applesauce – Be sure to use pure, unsweetened applesauce!
- almond milk – Feel free to add any other kind of milk.
- coconut oil – This increases humidity.
- big egg – Helps bind waffles together.
- Vanilla extract – Flavor enhancers.
- grated apple – About 1/2 cup, which is about 1 large apple. No need to peel!
How to Make Oatmeal Apple Muffins
Step 1: Mix dry ingredients
Combine oat flour, rolled oats, coconut palm sugar, baking powder, baking soda, cinnamon and salt.
Step 2: Mix dry ingredients with wet ingredients
In another bowl, combine applesauce, almond milk, coconut oil, eggs, and vanilla extract. Add dry mixture to wet mixture and stir until combined. Stir in grated apple.
Step 3: Bake
Spoon batter evenly into 12 muffin cups. Bake for 20-25 minutes or until top springs back and passes toothpick test (no batter comes out when poked) Remove from oven and allow to cool in tin for 10 minutes. Remove from tin and cool completely on a wire rack.
Easy exchange and substitution
These oatmeal apple muffins are delicious, but if you want to make some simple swaps or use some add-ins, here are some ideas:
add chocolate chips – Apple + chocolate? Sign me up! You’ll want to use about 1/3-1/2 cup of chocolate chips and mix them directly into the batter.
Add walnuts and mix well – For a delicious flavor, add 1/3-1/2 cup chopped walnuts or other nut of choice (pecans are great too!).
Add to berries – 1/2 cup blueberries or any other fresh or frozen berries
chopped carrots – 1 large carrot for carrot cake muffins!
grated zucchini – 1 large zucchini, for extra veggie content (be sure to squeeze out all the water!)
dried fruit – Use 1/2 cup of what you have on hand. Raisins are a great addition!
