In this post, we share the best (and fastest!) way to cook steel-cut oats that requires the least amount of cooking time!

With 10 years of experience in the food industry, I have tested all the different methods of cooking steel cut oats and this is definitely the creamiest and fastest, but perhaps most importantly, it is food safe!

Many overnight steel-cut oatmeal recipes leave the pot out overnight, which is both unsafe and poor cooking technique. I’ll teach you how to get the same results without having to wait 30 minutes on the stovetop!

Can you make overnight oats from steel cut oats?

Yes, it is possible to make overnight oats from steel-cut oats, but it requires more preparation and planning than using rolled oats.

Since steel-cut oats take longer to cook than rolled oats, they need to be pre-cooked before being mixed with the other ingredients for overnight oats. Unfortunately, you can’t just soak steel-cut oats in liquid and let them sit overnight (as is the case with rolled oats).

Precooking before placing in the refrigerator ensures that your steel-cut oats are fully cooked when you’re ready to eat them the next morning.

The great thing about making overnight steel cut oats is that you end up cutting down on the cooking time because you don’t have to wait 20-30 minutes for the steel cut oats to cook. Pre-cooking it for 1 minute and then storing it in the refrigerator is a huge time saver and is considered food safe (unlike some websites that suggest you can soak it on the stovetop overnight, but you shouldn’t!).

Can you leave oats on the stove overnight?

While I’ve seen recipes that say you can cover the pot and let it sit overnight, that’s not a good idea from a food safety standpoint. Just take the extra step of placing it in a large bowl or container with a lid and letting it sit in the refrigerator overnight. Yes, it’s an extra step and more dishes, but no one wants to get sick from food that’s been sitting out for too long!

What are steel cut oats?

The main difference between steel-cut oats and rolled oats is how they are processed. Steel-cut oats are made by cutting whole oats into small pieces with a steel blade, while rolled oats are made by steaming and rolling out whole oats. They are thought to be less processed than rolled oats and retain more of their natural nutrients. They are a good source of dietary fiber, protein, and healthy fats and have a variety of health benefits, such as improved blood sugar control and cardiovascular health. This also means that steel cut oats generally take longer to cook (unless using my overnight steel cut oats recipe, which takes 20-30 minutes!), whereas rolled oats are closer to 5-10 minutes. Steel-cut oats have a chewier, nuttier texture that’s delicious.
