My first choice is definitely to chop them up and use them in baked goods, but when I’m craving pizza but don’t want to deal with a pizza crust, I make these zucchini pizzas! They’re delicious, easy to assemble, and a recipe the whole family will love.

- 4 medium to large zucchini, cut in half lengthwise
- 1 cup italian tomato sauce
- 1 1/2 cups Shredded mozzarella
- salt and pepper, Go and try it
- 2 tablespoons chopped fresh basil
Topping suggestions:
- 1/4 cup chopped red onion
- 1/4 cup sliced olives
- 1/2 cup Mushroom slices
- 1/4 cup Mini Pepperoni
- 1/2 cup cooked sausage or turkey sausage
- Preheat oven to 400 degrees Fahrenheit.
- Line a baking sheet with baking paper.
- Place sliced zucchini on parchment paper and remove seeds with a spoon or the tip of a melon baller. This will create a small well about 1/4 inch deep inside each zucchini.
- Evenly distribute tomato sauce over zucchini (about 1 tablespoon per zucchini) and sprinkle with chopped mozzarella cheese, salt and pepper.
- Sprinkle the zucchini with any desired toppings, or leave it plain.
